Ingredients of Vegetarian Omlette

  1. It's 3 of eggs.
  2. It's 1/4 cup of fresh chopped spinich.
  3. You need 1/3 small of diced tomato.
  4. Prepare 2 of sliced mushrooms.
  5. Prepare 1 of finely chopped green onion.
  6. It's 1/4 cup of shredded cheese of choice, i used a nacho/taco blend that i had on hand ;-).
  7. You need 1/2 tsp of dried basil leaves.
  8. It's 1 of salt to taste.
  9. It's 1 of freshly ground black pepper to taste.
  10. It's 1 small of dab of butter.

Vegetarian Omlette step by step

  1. Heat 9" skillet on medium-low until evenly heated and add butter to coat pan..
  2. Whisk eggs in a small bowl. Add basil, salt and pepper and thoroughly whisk again. (this gives an awesome, perfectly even mixture of seasoning through the whole omelette...yum!).
  3. Pour egg mixture into pre-heated skillet..
  4. Allow egg to cook for about 2-3 minutes, then flip over to continue cooking..
  5. Add cheese and additional toppings to the flipped egg..
  6. When cheese melts, gently fold the egg over in half and slide onto your waiting plate..
  7. Eat immediately, or you can grab your phone/camera and take a bunch of awesome pictures like I'm known to do with every meal now.....
